003. Midnight Market

This CC was a tribute to the umami flavors of the East - smoky, savory, sweet, and deeply satisfying. We played with texture and heat, balancing delicate bites rooted in tradition, like chawanmushi and soup dumplings, with bolder pairings like okomoniyaki and bao buns stuffed two ways (like elegance meets street food). We ended the night on a nutty note with black sesame mochi cake with sesame caramel (sign, yeah i know).
