004. Off The Record
This dinner felt like a love letter to ‘The Original,’ like it was planned with love but evolved into something greater. I crafted the menu around what I was craving: jammy tomato & whipped ricotta tarts, beet & goat cheese pasta, crisp little gem lettuce, and rack of lamb with a marinade I really wish I wrote down… Santi caught and cooked the shrimp the Spaniard way – seared a la plancha, hot and fast with lots of salt. We ended the night with bowls of strawberry rhubarb crumble and oat-y cardamom topping, and maybe some impromptu dirty martinis.
